How Long is Serrano Ham Cured For?

The minimum curing time for a ham to qualify as Jamon Serrano under the EU Traditional Speciality Guaranteed (ETG) certification is 7 months. However, the best serrano hams are cured for significantly longer:

  • 7–12 months — Standard serrano ham. Milder flavour, softer texture.
  • 12–15 months — Reserva. More developed flavour and firmer bite.
  • 15+ months — Gran Reserva. The pinnacle of serrano ham. Intense aroma, deep red colour, and a complex, balanced saltiness that develops only with extended curing.

Please note that the above numbers relate to the Jamon (the larger back leg). The Paleta Serrana (the smaller front leg) has a shorter curation time due to it's size. The Four Stages of the Curing Process

Traditional serrano ham goes through four distinct phases:

  1. Salting — The fresh ham is buried in sea salt for 1–2 weeks to draw out moisture and begin preservation.
  2. Post-salting (resting) — The ham is washed and left to rest in cool, humid conditions for several weeks, allowing the salt to distribute evenly through the meat.
  3. Drying — The ham is moved to drying rooms where temperature and humidity are gradually increased, mimicking the natural mountain air of Spain. Fat begins to melt and penetrate the muscle, developing flavour.
  4. Ageing (bodega) — The ham is transferred to a cellar where it continues to mature slowly. This is where the magic happens — enzymes break down proteins and fats, creating the complex flavour compounds that define a great Gran Reserva.

Longer curing means more moisture loss, more enzymatic activity, and a more concentrated flavour. A 15-month Gran Reserva will have lost around 30–35% of its original weight — all of that is water, leaving behind pure, intensely flavoured meat.
